Green Beans with Garlic and Smoked Olive Oil

In this dish, the green beans are chilled and very garlicky! A nice departure from the usual heavily-sauced green bean dishes. Barb L.

Serves: 4-6


¾ pound green beans, ends trimmed

5 cloves of garlic, minced (about 2 ½ Tbsp)

1 Tbsp Flying Olive Garlic Extra Virgin Olive Oil

2 Tbsp Flying Olive Smoked Extra Virgin Olive Oil

Kosher salt, to taste

A squeeze of fresh lemon juice, if desired

2-3 tsp toasted and chopped hazelnuts, optional


Prepare an ice bath. Bring a large pot of water to a rapid boil. Place the green beans in the watera nd blanch them until they are still crisp, about 2-3 minutes. Immediately drain the beans and plunge them into the ice bath until completely cool. Drain from the ice bath and place on paper towels to dry.

Mince the garlic. In a small pan, heat the Flying Olive Garlic and Smoked Extra Virgin Olive oils. Add the minced garlic. Sauté for about 1 minute until the garlic becomes just fragrant. Remove from the heat and add the salt and stir. Let the sauce cool completely.

Place the green beans in a sealable container. Pour on the cooled garlic mixture. Toss to coat. Place the beans going all one way on a serving plate, scooping up any garlic remaining in the container. Add a squeeze of fresh lemon juice, if desired. Sprinkle with hazelnuts. Serve.
