Grilled Scapes

A scape is the fibrous stalk of a clove of garlic. When young, they are great diced and used like a green onion, although the taste is pure garlic. Older, like these, they can be steamed, grilled or cooked. The texture is similar to asparagus without the pronounced flavor. We found these at our local farmer’s market in the beginning of June. A little tough this late in the season, but fun to try.Barb L.

Yield: 2 Servings


8 garlic scapes, tip trimmed

1 Tbsp Flying Olive Eureka Lemon Extra Virgin Olive Oil

Kosher salt

Freshly ground black pepper


Heat the grill and a grill pan on high.

Place two stalks together in an overhand knot. Gently pull them so they will stay together. Place on a plate and drizzle with Flying Olive Eureka Lemon Extra Virgin Olive Oil, salt, and freshly ground pepper.

When the grill pan gets hot, place each “bundle” in the grill pan. Turn down the heat to medium. Grill for approximately 2-3 minutes until lightly charred. Turn with tongs and repeat. Serve.
