Peppery Prosciutto or Bacon Green Beans

Yield: 4 servings

Ingredients:

1 pound of green beans, tipped and tailed

2-3 tsp Flying Olive Garlic or a Single Varietal Extra Virgin Olive Oil of Choice

4 pieces of prosciutto, sliced very thin or 2-3 pieces of bacon, chopped

1 large shallot, minced (about 5-6 Tbsp)

4 cloves of garlic, minced

½ tsp freshly ground black pepper

¼ tsp salt

Directions:

Bring a large saucepan of water to a boil. Add the beans and cook for about 4-5 minutes until crisp tender. While the beans are cooking, prepare an ice bath by adding ice cubes to a bowl of cold water. When the beans are done, drain them and plunge them into the ice bath. When they are cold, drain again and set aside.

Heat a pan on medium with the Flying Olive EVOO of Choice. Add the prosciutto or bacon and cook until crispy. Remove the meat and let drain on paper towels. Add the minced shallot and cook about 1-2 minutes. Add the garlic and cook about 30 seconds to 1 minute until it becomes fragrant. Add the beans and sprinkle with the pepper and salt. Continue to cook about 2 more minutes until the beans are warmed through. Remove to a serving dish and top with the prosciutto or bacon.
