Chilled Citrus Almond Green Beans

1 pound of green beans, tipped and tailed

2 Tbsp minced Italian parsley

1 1/2 tsp orange or lemon zest (depending on which Flying OLive EVOO you use below)

1 clove minced garlic (about 1 tsp)

¼ tsp freshly ground black pepper

¼ tsp salt

1 Tbsp Flying Olive Blood Orange, Gremolata, or Lemon Extra Virgin Olive Oil

2 Tbsp sliced almonds, toasted


Bring a large saucepan of water to a boil. Add the beans and cook for about 4-5 minutes until crisp tender. While the beans are cooking, prepare an ice bath by adding ice cubes to a bowl of cold water. When the beans are done, drain them and plunge them into the ice bath. When they are cold, drain again and set aside.

Place the beans in a medium-sized bowl. In a small bowl, mix the parsley, orange zest, garlic, salt, and pepper. Add to the green beans and toss. Drizzle on the Flying Olive Extra Virgin Olive Oil of Choice and toss again. Sprinkle on the almonds and serve.
