Smoked Sausage and Apple Skillet

2 tsp mild Flying Olive Single Varietal Extra Virgin Olive Oil or Chipotle Extra Virgin Olive Oil if a little spiciness is desired

1 (13-16 ounce) package smoked sausage (I used turkey sausage), sliced into 1” coins

3 -4 cups Granny Smilth apples, sliced, about 3-4 large apples (I used a softer apple in the photo. It gets mushy faster than the Granny Smith apples)

2 Tbsp Flying Olive Gravenstein Apple Balsamic Vinegar

1 cup onion, medium dice

2 Tbsp water, more if needed

Salt and pepper, if desired


Add 2 tsp Flying Olive Extra Virgin Olive Oil of Choice to a skillet on medium-high heat. When the oil begins to shimmer, add the smoked sausage to the skillet and brown on one side, 2-3 minutes. Turn the sausage over and repeat.

Meanwhile, slice the apples and place in a large bowl. Add the Gravenstein Apple Balsamic after the first apple is added, and toss to coat. This will prevent the apples from browning. Add the onions to the apples and toss again gently. Add the water and cover. Cook on medium heat for about 5-10 minutes until the apples are tender. Be careful not to overcook the apples as they will get mushy. Season with salt and pepper, if desired and serve.
