1 tsp. capers (optional) drained
6 tomatoes, ends removed, rough chopped, (if very juicy, drain)
4-6 cloves garlic, chopped
¼ c fresh basil, rough chopped, stems removed
Approximately ¼ cup Flying Olive's Basil Extra Virgin Olive Oil
6 thin slices grainy bread/baguette
½ cup grated cheese of choice
Salt & freshly ground black pepper (opt)
Brush both sides of bread slices with Basil EVOO. Place in broiler and toast for 2-4 mins each side.
Watch carefully. While bread is toasting, place the capers, tomatoes, garlic, & basil in a blender, and
pulse about 10 times until mixture is coarsely chopped.
Place the bruschetta mixture on top of each slice of toasted bread. Add about 1 tsp of cheese to
each. Sprinkle with salt and pepper. Return to broiler just until cheese melts. Serve immediately.
