Serves: 7-15 (Just be warned, each Caprese bite is just that, 1 very big bite. How many each person will eat is just a guesstimate!)
3 Tbsp Flying Olive Basil, Garlic, or Tuscan Herb Extra Virgin Olive Oil
½ Tbsp Flying Olive Sicilian Lemon or Oregano Balsamic Vinegar
½-1 tsp Italian seasonings (I really like McCormick's Italian spice grinder)
Salt and freshly ground black pepper
½ 8 oz fresh mozzarella ball, cut into 1" cubes
1 pkg mini fillo shells (about 15)
8 cherry tomatoes, cut in half, different colors if available
15 small basil leaves, stems removed
2-3 Tbsp of Flying Olive Aged Dark Balsamic of Choice, such as Traditional
Combine the Flying Olive Extra Virgin Olive Oil of Choice. Mix in the Flying Olive Balsamic of Choice. Add the Italian seasoning and salt and pepper. Whisk or stir together. Cube the mozzarella and add it to the marinade. Let the mozzarella sit in the marinade for at least 30 minutes to one hour.
When ready, add the cube of mozzarella to the fillo shell. Add a half of a cherry tomato on the edge and garnish with a basil leaf. Place the finished shells on a plate.
Right before you are ready to serve the Caprese Bites, drizzle the Flying Olive Aged Traditional Balsamic over each one and serve. Enjoy!
