1 (1-1¼ pound) flank steak
3 Tbsp Flying Olive Chipotle Extra Virgin Olive Oil
2 Tbsp Flying Olive Lime Extra Virgin Olive Oil
¼ cup Flying Olive Sicilian Lemon Balsamic Vinegar
2 Tbsp minced garlic
½ tsp ground cumin
1 tsp fresh lime juice
½ tsp freshly ground black pepper
½ tsp kosher salt
Score flank steak into a diamond pattern on both sides. Place in a zip-lock bag.
Mix together the remaining ingredients. Pour over steak, zip closed, and flip the bag a few times. Place in the refrigerator for 1-24 hours.
Remove steak from bag and discard marinade. Preheat grill on high. Reduce heat to medium. Sear the steak, approximately 1 minute, on each side.
Cook steak until it reaches the desired doneness. Transfer to a platter and let stand 10 minutes. Slice steak against the grain and into thin slices and serve.
The steak can also be used on a salad or in steak tacos.
