This goes together very quickly. Here's our recipe for Basic Hummus that is perfect for this! Barb L.
1 tsp ground turmeric
¾ tsp salt,
½ tsp ground cumin
¼ tsp cinnamon
¼ tsp cayenne, if desired
2 Tbsp Flying Olive Chipotle Extra Virgin Olive Oil, Harissa, Cayenne Red Chili or a Single Varietal of Choice, divided
1 lb boneless chicken breasts cut into ½" cubes
1 large, diced zucchini
Rice for serving
Hummus, diced tomatoes, sliced cucumber, harissa, and/or whole wheat pitas for serving
Blend the turmeric, salt, cumin, cinnamon, and cayenne in a small bowl. Toss the cut-up chicken with the spice blend.
Heat 1 Tbsp Flying Olive Extra Virgin Olive oil of Choice in a large skillet. Add the chicken and sautĂ© for 3 minutes until cooked through. Remove the chicken and keep warm under foil. To the same skillet, add the remaining 1 Tbsp Flying Olive Extra Virgin Olive oil of Choice, zucchini, and any remaining spice mixture.
Cook 5 minutes until the zucchini is softened.
Serve the chicken and zucchini in a bowl over rice with a scoop of hummus, diced tomatoes, sliced cucumber or other condiments, if desired.
