1 Avocado (avocados vary so much in size, it's important to taste as you go)
½ tsp lime zest
1 ½-2 tsp lime juice
¼ cup Flying Olive Persian Lime Extra Virgin Olive Oil
¼ cup Flying Olive Sicilian Lemon Balsamic Vinegar
¼-? Chipotle Pepper in adobo sauce, according to your taste
¾ tsp garlic powder
¼ cup loosely packed cilantro
A few drops of Flying Olive Chipotle Extra Virgin Olive Oil or hot sauce, if desired, to taste
Salt and Freshly ground black pepper to taste
Combine all ingredients in a food processor, scraping down sides. Process until smooth. Taste and adjust seasonings.
Use on grilled meat, as a salad dressing, or as a dip. Especially good with chicken or pork such as Chipotle and Pineapple Balsamic Marinated Pork Tenderloin
