Apple and Pear Salsa

This is a perfect addition to grilled chicken or roast pork. Our son, Ben, says it's good by itself.

Serves: 4

2 apples, skin on, cored, and diced (I used 1 gala and 1 Granny Smith)

2 pears, skin on, cored, and diced

½-1 fresh jalapeno, cored, seeded, and minced

¾ Tbsp Flying Olive Gravenstein Apple, Cranberry Pear, Pomegranate-Quince or Serrano Honey Vinegar

¾ Tbsp Flying Olive Lemon or Lime Extra Virgin Olive Oil

¼ cup onion, diced OR ½-1 tsp onion powder

Freshly ground black pepper, to taste

Salt to taste

In a medium bowl, combine the apples, pears, and jalapeno.

Whisk together the Flying Olive Extra Virgin Olive Oil and Vinegar of Choice. Pour over the apple/pear combination and toss until well coated. Add the remaining salsa ingredients and stir. Season with pepper to taste. Cover and refrigerate for a few hours for flavors to develop. Right before serving, add the salt to taste.

Serve with the meat of choice or use by itself as a side.
