Rainbow Citrus Salad


A variety of citrus and/or other fruits in season.  In the photo above, I used 1 each of:

Blood Orange

Cara Cara Orange

Navel Orange

Pink Grapefruit



For vinaigrette:

2 Tbsp Flying Olive Dark Chocolate or Expresso Balsamic Vinegar

2 Tbsp Flying Olive Mandarin Orange or Blood Orange Extra Virgin Olive Oil

1 tsp honey, stevia, sugar or sweetner of choice

Sea Salt to your preference (optional)


Wash, peel and slice each fruit into thin wheels. Arrange "artistically" on a platter.  Drizzle the vinaigrette over the fruit. Sprinkle with your favorite Salt of the Earth Sea Salt*.  Alternately, you can let each person drizzle on their own vinaigrette and salt.
