Always on the lookout for lower fat and carb recipes, this turkey meatloaf and Cauliflower Mashed Potatoes fit the bill. Adding Flying Olive's Neapolitan Balsamic Vinegar gives the turkeyburger or ground beef some nice zing! Barb L.
2 pounds turkey burger (I especially like Jennie-O) or lean ground beef
1 cup seasoned breadcrumbs or plain breadcrumbs with ½ tsp of Italian Seasonings added
1 egg, beaten (optional--really)
1 large onion, diced
¼ tsp salt
¼ tsp pepper
1 cup ketchup
2 Tbsp Flying Olive Neapolitan Herb Balsamic Vinegar
Preheat the oven to 350 degrees F.
Combine the breadcrumbs, egg, if using, onions, salt and pepper in a bowl. Mix well.
In a large bowl, add the onion mixture to the turkey or beef ground meat. In a small bowl, mix the ketchup with the Flying Olive Neapolitan Herb Balsamic Vinegar. Take out ¼ cup of the mixture and set aside. Add the remaining ketchup/balsamic mixture to the turkey or beef mixture. Combine well (I find my clean hands work well for this!)
Add the mixture to a large loaf pan, pressing the edges down slightly so that the meatloaf is higher in the center. Brush the remaining ¼ cup of ketchup/balsamic mixture over the top of the meatloaf.
Bake for 70-80 minutes in the oven or until an instant read thermometer reads 160 degrees F for either the turkey or the ground beef meatloaf.
Serve with additional ketchup and balsamic mixture, if desired.
