Yield: 3 Mini meat loaves (colorful mini meatloaf pans are available in many craft stores)
Ingredients:
1 lb ground turkey
1 lb ground pork
1 oz (about 10) tortilla chips, crushed
1 can (4.5 oz) chopped mild green chilis, or desired spiciness
1 ½ Tbsp minced garlic
1 ½ Tbsp dried oregano, Mexican preferred
1 ½ Tbsp chili powder (choose the heat level you prefer)
1 ½ Tbsp ground cumin
A pinch of sea salt
1 tsp Flying Olive Chipotle Extra Virgin Olive Oil or Flying Olive EVOO of Choice
Your choice of garnish: Warmed salsa, guacamole, chopped fresh cilantro, Salts-of-the-Earth Xocolatl* (Aztec chocolate, chili, a hint of cinnamon) or Mayan Gold Salt*, Monterey Jack or Taco cheese
Directions:
Preheat the oven to 350 degrees.
Mix turkey, pork, crushed tortilla chips, green chilis, garlic, oregano, chili powder, cumin, and salt in a medium bowl until well blended. (I like to do this in my standing mixer).
Grease each mini meatloaf pan with a little Press the meat and spice mixture into the mini meatloaf pans Flying Olive Chipotle Extra Virgin Olive Oil or Flying Olive EVOO of Choice. Divide the meat/spice mixture into thirds and press it into the pans.
Place in the oven for about 25-35 minutes. The meat should start to pull away from the sides of the pans. Test for doneness and remove from the oven to cool a bit.
Meanwhile, prepare the garnishes.
Serve the meatloaves in the mini pans with the salsa and other desired garnishes. Sprinkle with or pass the Salts-of-the-Earth Xocolatl or Mayan Gold Salt. Enjoy!
